A fragrant, spicy curry with tender chicken pieces
This dish has been in my family for generations. It is a classic, comforting dish that is served during special occasions. I remember when I was a child, my grandmother would make this dish for us to enjoy after a long day of playing. The aroma of the spices and the tenderness of the chicken always made me feel so at home. It is a dish that I continue to make and enjoy to this day.

Ingredients
- 1 kg chicken, cut into cubes (2.2 lbs)
- 2 tablespoons vegetable oil (30 ml)
- 2 onions, diced (400 g)
- 4 cloves garlic, minced (20 g)
- 2 tablespoons ginger, minced (30 g)
- 2 tablespoons curry powder (30 g)
- 1 teaspoon ground cumin (5 g)
- 1 teaspoon ground coriander (5 g)
- 1 teaspoon chili powder (5 g)
- 1 teaspoon turmeric (5 g)
- 1 teaspoon garam masala (5 g)
- 1 can diced tomatoes (400 g)
- 1/2 cup coconut milk (125 ml)
- Salt and pepper to taste
Cooking Instructions
- Heat the oil in a large pot over medium-high heat. Add the onions and cook until softened, about 5 minutes.
- Add the garlic, ginger, curry powder, cumin, coriander, chili powder, turmeric, and garam masala. Cook for 1 minute, stirring constantly.
- Add the chicken and cook for 5 minutes, stirring occasionally.
- Add the diced tomatoes and coconut milk. Bring to a boil, then reduce the heat to low and simmer for 25 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot with rice or naan.
