A creamy, white risotto with mushrooms and herbs
Mushroom risotto is a classic Italian dish that is often served as a main course. It is a simple yet flavorful dish that can be enjoyed by all. I first encountered this dish while traveling in Italy. I remember being served a plate of creamy, white risotto with mushrooms and herbs. The flavors were so rich and comforting that I knew I had to recreate it at home. Since then, I have served this dish to friends and family with great success. Everyone always raves about the flavor and texture of the dish!

Ingredients
- 2 tablespoons olive oil (30ml)
- 1 medium onion, finely diced (150g)
- 2 cloves garlic, minced (10g)
- 2 cups arborio rice (400g)
- 6 cups vegetable stock, heated (1.4L)
- 1/2 cup white wine (120ml)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon freshly ground black pepper (1.5g)
- 1/2 cup freshly grated parmesan cheese (50g)
- 1/2 pound mushrooms, sliced (225g)
- 2 tablespoons butter (30g)
- 2 tablespoons chopped fresh parsley (10g)
Cooking Instructions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened and translucent, about 5 minutes.
- Add the rice and stir to coat with the oil. Cook for 1 minute, stirring constantly.
- Add the heated stock, white wine, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, until the rice is tender and the liquid is absorbed, about 20 minutes.
- Stir in the parmesan cheese and mushrooms. Cook for 5 minutes, stirring occasionally.
- Stir in the butter and parsley. Serve hot.
