Ingredients
- 1 whole chicken (2.2 kg or 4.8 lbs)
- 2 tablespoons olive oil (30 mL)
- 2 tablespoons minced garlic (30 mL)
- 1 teaspoon salt (5 mL)
- 1 teaspoon black pepper (5 mL)
- 1 lemon, cut into wedges (1 lemon)
Cooking Instructions
- Preheat oven to 200°C (392°F).
- Rinse the chicken and pat dry with paper towels.
- In a small bowl, mix together the olive oil, garlic, salt, and pepper.
- Rub the mixture all over the chicken, including the inside of the cavity.
- Place the lemon wedges inside the cavity of the chicken.
- Place the chicken in a roasting pan and cover with foil.
- Roast the chicken in the preheated oven for 1 hour.
- Remove the foil and continue to roast for an additional 15 minutes.
- Remove from oven and let rest for 10 minutes before serving.
