I first had this dish at a small Italian restaurant in Rome. It was served in a creamy sauce that was lightly flavored with garlic and bacon. The parmesan cheese added a nice salty flavor and the pasta was cooked perfectly. I have been making this dish ever since and it has become a favorite with my family and friends. Whenever I serve it, it is always a hit.

Ingredients

  • 400g (14oz) of spaghetti
  • 200g (7oz) of bacon, diced
  • 2 cloves of garlic, minced
  • 3 eggs
  • 100g (3.5oz) of parmesan cheese, grated
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Cooking Instructions

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the bacon and cook until crispy, about 5 minutes. Add the garlic and cook for another minute.
  • In a medium bowl, whisk together the eggs, parmesan cheese, salt and pepper. Set aside.
  • Add the cooked spaghetti to the skillet with the bacon and garlic. Pour the egg mixture over the top and stir to combine. Cook until the sauce has thickened, about 5 minutes.
  • Serve immediately and enjoy!
